This pudding is more than a dessert — with only 220kcal per portion, it’s a functional blend of fibre, minerals, antioxidants, and healthy fats that support steady energy, digestion, and overall wellbeing. The chia seeds bring soluble fibre and plant‑based omega‑3s; raw cacao delivers flavanols for heart and cognitive health; cashews offer magnesium, copper, and nourishing fats; and the dates and honey provide natural sweetness with added micronutrients. Ingredients (3 servings)
¼ cup chia seeds
¼ cup pre-soaked cashews
2 medjool dates (pitted)
1 ½ cup filtered water (or dairy free milk alternative)
Pinch sea salt
1 tbsp raw honey
1 small banana (optional)
Coconut cream (optional)
Method
In a blender, mill the chia seeds to powder.
Add the cashew nuts, cacao, pitted dates, honey, salt, and finally water (or your preferred dairy‑free milk alternative) and blend until completely smooth. If you are using banana and/or coconut cream, add them now and blitz.
For a silkier texture, add extra liquid and blend until velvety.
Pour into serving cups and refrigerate for at least 1h to set. If leaving until the next day, refrigerate in lidded jars.
When ready to serve, top up with fresh fruit, drizzle with honey chocolate shavings for good measure.
