Ingredients (1 portion)
1 wild salmon fillet (125g)
½ tsp coconut oil
50g cooked chickpeas
30g cooked quinoa
1 cup kale
1 tbsp seeds (sunflower/pumpkin)
½ tsp ginger (grated or powder)
½ tsp dill
½ tsp extra virgin olive oil
1 tbsp fresh lemon juice
Sea salt & pepper to taste
Procedure
On a medium-heat pan, cook the salmon with coconut oil for 2-3 min on each side (skin down first).
Season the salmon and drizzle with dill, ginger and lemon juice; reserve.
To the same pan, add the kale with a splash of water, chickpeas and quinoa and cook for 1 minutes.Â
Plate the salmon and veg, drizzle with olive oil and sprinkle with seeds.
