5' Supercharged Salmon Power-Bowl

Ingredients (1 portion)
  • 1 wild salmon fillet (125g)

  • ½ tsp coconut oil

  • 50g cooked chickpeas

  • 30g cooked quinoa

  • 1 cup kale

  • 1 tbsp seeds (sunflower/pumpkin)

  • ½ tsp ginger (grated or powder)

  • ½ tsp dill

  • ½ tsp extra virgin olive oil

  • 1 tbsp fresh lemon juice

  • Sea salt & pepper to taste


Procedure
  1. On a medium-heat pan, cook the salmon with coconut oil for 2-3 min on each side (skin down first).

  2. Season the salmon and drizzle with dill, ginger and lemon juice; reserve.

  3. To the same pan, add the kale with a splash of water, chickpeas and quinoa and cook for 1 minutes. 

  4. Plate the salmon and veg, drizzle with olive oil and sprinkle with seeds.
