No-Bake Chocolate-Date Nut Bites


If your sweet tooth and your wellness brain could design a treat together, it would look exactly like this No‑Bake Chocolate Date Nut Bites. They’re everything a modern, real‑food treat should be: naturally sweetened, satisfyingly crunchy, rich with good‑for‑you fats, and dipped in enough melted chocolate to make your inner child grin. Think of them as the lovechild of a chocolate bar and a nutrient‑dense energy bite. Minimal effort, zero baking, maximum pleasure.


Ingredients (16 bite-size pieces / 8 portions)

  • 8 medjool dates

  • 1/2 cup crunchuy mixed nuts & seeds (almonds, cashews, pumpkin)

  • 2 tbsp tahini

  • 1 cup melted chocolate

  • Optional: cinnamon


Toppings

  • Nuts & Seeds

  • Sea salt flakes


Method

  1. If the dates are too dry, soak them in warm water for 15min. Drain well. 

  2. Chop the nuts/seeds to obtain small chunks.

  3. OPTION 1 (with food processor): Combine dates, nuts/seeds and tahini; process until the mixture starts to come together into a sticky ball. Transfer to a parchment-lined lidded container  (I use the smallest one in this set) and press into an even layer. 

    OPTION 2 (no food processor): Slice open the dates and press them on the parchment paper (skin down), cover with another sheet of parchment and press into an even layer. Transfer to a lidded container (I use the smallest one in this set). Spread the tahini over the date layer and sprinkle the chopped nuts / seeds.

  4. Pour the melted chocolate on top of the date nut mixture / layer and spread evenly.

  5. Optional: Sprinkle nuts, seeds and sea salt on top of the chocolate if desired. 

  6. Cover the tray and refrigerate for at least 2h, until the chocolate has firmed up enough to slice the sheet into squares.


A few days ago, I had friends over for dinner and fully intended to serve these treats for pudding… but time had other plans. So after we’d finished eating, I quickly made the chocolate, — a two‑minute job — and while it was still warm, everyone grabbed a date, popped out the pit, and tucked a couple of nuts inside. Then came the fun bit: we dipped our little creations straight into the glossy chocolate and ate them immediately, still dripping and delicious. Honestly, say no more.
