Morning delight: Wholesome GF Apple Muffins

No refined sugar!! And they taste heavenly. Who doesn’t love a muffin that’s both healthy and indulgent? These wholesome GF apple muffins are perfect for busy mornings or a quick school-run treat. They’re naturally sweetened with ripe banana and medjool dates, spiced with warming cinnamon, ginger and nutmeg, and topped with a delicious almond-oat crunch. Whether you’re a busy mum or just looking to make healthier choices, these muffins will keep you feeling fueled and happy. Breakfast or snack, sorted!


Ingredients (for 12 large muffins or 18 smaller ones)
  • 100g GF oats (milled)

  • 100g GF whole flour

  • 1tsp baking powder (aluminum free)

  • 4 eggs

  • 150g butter (melted)

  • 1tsp vanilla paste

  • 2tsp cinnamon

  • 1tsp ground ginger

  • 1/2tsp ground nutmeg

  • 1/2tsp Himalayan salt

  • 1/2tsp bicarbonate of soda

  • 1 large ripe banana

  • 6 medjool dates (pitted)

  • 4 tangy apples (Granny Smith or Braeburn)

  • 1 lemon (juice and rind)


For the topping
  • 1/2 cup oats

  • 1/2 cup almond flakes

  • 50g butter (melted)

  • 2tbsp maple syrup

  • 1tsp cinnamon


Procedure
  1. Blend the wet ingredients: In a blender or food processor, combine the eggs, banana, dates, melted butter and vanilla until smooth and well mixed.

  2. Mix the dry ingredients: In a large bowl, combine the milled oats, gluten-free flour, spices, salt, bicarbonate and baking powder.

  3. Prep the apples: Wash the apples (no need to peel if they are organic) and chop them into pieces approx 1cm. Place them in a bowl, drizzle with lemon juice and add the rind. Mix and reserve.

  4. Combine wet & dry: Pour the wet mixture into the dry ingredients and stir until combined. Don't add the apples just yet.

  5. Prep for baking: Line a muffin tin with paper liners; add 1 tbsp of batter to each. Mix the remaining batter with the apples, and divide it evenly among the muffin cups.

  6. Make the topping: In a small bowl, mix together the oats, almond flakes, melted butter, cinnamon and maple syrup. Spoon this topping evenly over the muffin batter and press slightly.

  7. Bake: Preheat the oven to 180°C (350°F) and bake the muffins for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.

  8. Be patient: Let the muffins cool for 5 minutes in the tin, then transfer to a wire rack. You can have them warm, but they may stick to the paper... Up to you!
