There’s something deeply satisfying about a breakfast that works with your biology, not against it — and these savoury superfood muffins do exactly that. They’re a fusion of protein, fibre and anti‑inflammatory phytonutrients, designed to keep your energy steady, your brain switched on and your metabolism humming through the morning. Think of them as your upgraded, ready-to-go version of a cooked breakfast — packed with ingredients that support detox, immunity and healthy gene expression.


  • Eggs — apart from providing complete protein, they’re one of the richest sources of choline, a nutrient essential for brain development, methylation and healthy cell signalling.

  • Wild salmon — delivers high‑quality protein plus omega‑3 fatty acids (EPA & DHA) to support brain function, reduce inflammation and stabilise energy.

  • Mushrooms — provide β‑glucans and other bioactives that help modulate gene expression, lowering inflammation and oxidative stress.

  • Red onion — rich in quercetin, a flavonoid that supports healthy epigenetic signalling by calming inflammation and stabilising mast cells, a key component of your immune system.

  • Quinoa — adds extra protein, fibre and polyphenols, supporting metabolic balance and antioxidant defence.

  • Kale — a source of sulforaphane and cruciferous phytonutrients that activate detox pathways and reduce inflammation.

  • Turmeric — contains curcumin, which activates antioxidant and anti‑inflammatory pathways (including Nrf2) to support cellular resilience.



DID YOU KNOW... Black pepper dramatically increases the bioavailability of curcumin, the active compound in turmeric. Black pepper contains piperine, a compound shown to increase curcumin absorption by up to 20‑fold by slowing its breakdown in the liver and enhancing its transport across the gut lining.



Ingredients (12 muffins)

  • 8 large eggs whisked

  • 150g cooked wild salmon (flaked)

  • 100g (1 cup) mushrooms, finely chopped

  • ½ cup red onion, diced

  • ½ cup cooked quinoa

  • 1 cup steamed kale, finely chopped

  • 1-2 tsp turmeric

  • Sea salt & black pepper, to taste


Method

  1. Preheat and prep: Preheat the oven to 180°C and lightly grease or line a 12‑cup muffin tray.

  2. Prep the veg: Chop and steam the kale. Sautee the chopped mushrooms and diced onion in a little butter or EVOO. Leave to cool.

  3. Whisk the eggs: In a large bowl, whisk the eggs with sea salt, black pepper and turmeric until well combined and slightly frothy.

  4. Combine: Fold in the flaked wild salmon and cooked quinoa, breaking up any large salmon pieces as you go. Add the (cooled down) kale, mushrooms and onion, and fold until the vegetables are evenly distributed through the egg mixture.

  5. Fill the muffin tray: Divide the mixture between the muffin cups, filling each about three‑quarters full so they have room to puff up.

  6. Bake: Bake for about 20–25 minutes, until the muffins are set in the centre and lightly golden on top.

  7. Cool and store: Let them cool in the tray for a few minutes, then transfer to a rack. Store in the fridge and simply reheat for a grab‑and‑go cooked breakfast.
