Healthy meets delicious in this tasty and super nutritious pudding, which can also become breakfast or even turned into a smoothie. As one of my adventurous volunteers commented, some of the ingredients may not scream "pudding" at you, but be brave! Totally worth it.
Top up with your favourite fresh berries and seed, or try superberries for an extra boost.
Ingredients (per portion)
30g cashews (soaked overnight in water)
1 tbsp chia seeds
50g chopped frozen courgettes
6 tbsp of milk replacement (almond, coconut, or cashew) or coconut cream (for extra power and thicker consistency)
Lemon rind
1/2 lemon juiced
½ tsp vanilla essence (optional)
2 scoops of collagen (optional)
1 tsp honey (optional)
Procedure
Discard water from cashews
In the blender container, put the cashew nuts and chia seeds with the milk replacement, and let soak for 15 min.
Add all the rest of the ingredients (frozen courgette, lemon rind, juice and honey) to the container and blend until smooth. You may want to add a bit more liquid if necessary, depending on the consistency you want.
Pour into serving bowl or glass cup and dig in, or keep in the fridge until ready to eat.
