Gut-healing apple cherry pudding


Stewed apples are a great therapeutic food, ideal for the gut mucosal lining. Pectin in apples feed the good bugs, promoting healthy flora. Add cinnamon to help improve digestion and fight inflammation, and cherries to promote methylation. A great combo for success!

Who knew pudding could be good medicine?


TIP: Make sure you use organic apples, to avoid nasty pesticides and wax.


Ingredients (4 servings):

- 8-10 organic red apples, washed, cored and diced

- 1/4 cup filtered water

- 2 tsp ground cinnamon

- handful of cherries (can be frozen)

- 1/2 lemon, juiced


Instructions:

1- Place all ingredients in a pot, cover with a lid and cook over low heat for approx 15 min until apples are soft.

2- Leave to cool and blitz with a hand-held food processor.

3- Divide into lidded glass containers.


Enjoy warm or cold!
